A Brugge chocolate workshop is a delicious way to add creativity to your visit. At Belgian Chocola, you’ll make your own Belgian chocolates, enjoy canal views and take home a box of your handmade creations.
Our workshop lasts approximately 2–2.5 hours and takes place in Bruges’ historic centre. No previous experience is needed—your instructor guides you through each stage.
Your Chocolate Making Experience, Step by Step
1. Tempering the Chocolate
Start by learning how to temper chocolate. This means carefully controlling its temperature to help your finished chocolates develop a glossy appearance and a satisfying snap.
Your instructor explains the process and guides you as you prepare the chocolate for your creations.
2. Making the Chocolate Shells
Next, you’ll use moulds to make the outer shells of your pralines. You’ll learn how to coat the moulds and remove excess chocolate, leaving space for the filling.
The moulds then go into the fridge so the shells can cool and set while you prepare the next part.
3. Preparing the Ganache
While your chocolate shells cool, you’ll make ganache—a smooth mixture of chocolate and cream used as a filling.
You’ll learn how to combine the ingredients and prepare the ganache for filling your pralines.
4. Making Chocolate Mendiants
Next, you’ll create mendiants: small chocolate discs decorated with toppings.
Choose from the available toppings and experiment with different combinations. This stage gives you room to be creative with flavours, textures and decoration.
5. Filling and Finishing Your Pralines
Once the shells are ready, you’ll fill them with ganache and your choice of available ingredients.
You’ll then seal the pralines with chocolate and return the moulds to the fridge to set before unmoulding.
6. Enjoying Delicious Hot Chocolate
While your creations cool, take a break and enjoy a delicious hot chocolate.
It’s a moment to chat with the other participants, enjoy the canal views and look forward to seeing your finished chocolates.
7. Unmoulding and Discovering Your Results
Finally, you’ll unmould your chocolates and see the results of your work.
Watching your finished pralines come out of the moulds is one of the most rewarding moments of the workshop. Add a finishing touch with edible gold luster and pack your creations into your take-home box.
